chicken fried rice recipe | chinese fried rice

A popular fried rice recipe made using boneless chicken strips, rice, veggies, sauces etc... The rice is sauteed well with all these ingredients.

Ingredients

For cooking chicken:

  • 1 tbsp oil
  • 1 cup boneless chicken strips 2 chicken breasts
  • salt - to taste
  • 1/2 tsp black pepper powder
  • 1 1/2 tsp corn flour
  • 1 tsp ginger garlic paste
  • 1 egg white
  • 1/2 tsp red food color

Other ingredients:

  • 2 eggs
  • 1 tsp ginger garlic paste
  • 2 tbsp very finely chopped carrots
  • 2 tbsp very finely chopped capsicum
  • 2 tbsp very finely chopped spring onion bulbs white
  • 2 tbsp very finely chopped spring onion greens
  • 1 1/2 cup rice ordinary/basmati
  • salt -to taste
  • 1/2 tsp red chilli powder
  • 3/4 tsp white pepper powder
  • 1 tsp soya sauce
  • 1 tsp red chilli sauce
  • 2 tsp vinegar

Instructions

  • Firstly, cook the rice by adding sufficient water in a cooking vessel and rest it aside.

Making of chicken:

  • Add chicken into a bowl, add salt, black pepper powder, corn flour, ginger garlic paste, egg white, red food colour.
  • Mix well, marinate the chicken for half an hour.
  • In a wok, add a tbsp of oil, add marinated chicken, mix, saute and cook until chicken tenders.
  • Rest it aside.

Making of chicken fried rice:

  • In a separate wok, add oil and heat it.
  • Take two eggs, break them, add salt and blend well.
  • Add the beaten eggs into the wok.
  • Cook for few minutes, scramble the eggs and cook well.
  • Into it add ginger garlic paste.
  • Saute well.
  • Add chopped capsicum, chopped carrots, chopped spring onion white, chopped spring onion green.
  • Mix and saute well.
  • Add cooked chicken strips and saute for a minute.
  • Into it add cooked rice and mix well.
  • Saute for two to three minutes.
  • Add salt, red chilli powder, white pepper powder and mix well.
  • Saute for two to three minutes.
  • Add soya sauce, red chilli sauce and mix well.
  • Saute for a minute.
  • Add vinegar, mix well and saute for a minute.
  • Chicken fried rice is ready to be served.

Notes

1.Basmati rice too can be used to make chicken fried rice.
2.Chicken used should always be boneless and mainly make use of breast of chicken.
