Ingredients

For pressure cooking beef or tenderizing:

  • 500 gms of beef
  • salt to taste
  • 1 teaspoon red chilli powder
  • ¼ teaspoon turmeric powder
  • 1 teaspoon ginger garlic paste
  • 1 teaspoon oil
  • 1 cup water

For stir frying the beef:

  • 4 tablespoon oil
  • ½ teaspoon ginger garlic paste
  • tenderized beef (beef that has been pressure cooked)
  • 7-8 fresh curry leaves
  • 5-6 slit green chillies
  • ½ teaspoon garam masala powder

Instructions

How to clean the beef:

  • Take a knife and carefully remove the white layer over the beef pieces if there is any as it is very unhealthy and contains lots of fats.
  • Wash it under running water a couple of times.
  • Put the beef into a strainer for a few minutes in order to remove excess water.

Pressure cooking beef:

  • Take a pressure cooker, into it, add the washed beef, add salt, red chilli powder, turmeric powder, ginger garlic paste, oil, some water, mix everything well and pressure cook until it gets tender.
  • Generally it takes about one whistle on high flame and 3-4 whistles on low flame to get tenderized.
  • Reduce the steam, remove the cooker lid and check to see if there is water inside the pressure cooked beef.
  • If it contains water, then cook it on medium to low flame by keeping it uncovered until the beef absorbs all the water.
  • If required keep stirring in between to avoid burning the base.
  • If the water content is nil then do not need to cook it.
  • Switch off the flame and set it aside.

Stir frying the beef:

  • Take a pan, add oil into it and heat it.
  • Add ginger garlic paste and saute for few minutes on low flame.
  • Add the pressure cooked beef into it and mix well.
  • Add fresh curry leaves and slit green chillies into it, mix.
  • Roast it for few minutes on low flame.
  • Keep stirring in between to avoid burning.
  • This should be continued until the beef is roasted well.
  • It takes about 15 to 20 minutes to roast well.
  • Make sure to stir fry on low flame.
  • Lastly add garam masala powder for extra taste, mix well.
  • Once it appears nicely roasted and dark brown in color switch off the flame.
  • Serve it in a bowl.
  • Serve it with rice, lentils/dal.

Notes

  • The same recipe can be followed to make mutton fry as well.
  • It is better to use a non stick pan while stir frying to avoid burning.
  • If salt is less then do sprinkle some salt while stir frying.
