Ingredients
  

  • 2 tablespoon oil
  • 2 tablespoon finely chopped onions
  • 2 tablespoon finely chopped carrots
  • 2 tablespoon finely chopped green capsicum
  • 1 tablespoon finely chopped french beans
  • 1 tablespoon deseeded finely chopped tomato
  • Salt to taste
  • ¼ teaspoon red chili powder
  • ¼ teaspoon ginger garlic paste
  • ¼ teaspoon black pepper powder
  • 2 eggs
  • 1.5 cups water
  • 2 packets of maggi noodles
  • 2 sachets of maggi masala (comes with the noodles pack)

Instructions
 

  • Take a pan, add oil and heat it.
  • Add finely chopped onions, finely chopped carrots, finely chopped green capsicum, finely chopped french beans, deseeded finely chopped tomato.
  • Saute the veggies for 2-3 minutes.
  • Add salt to taste, red chili powder, ginger garlic paste.
  • Add black pepper powder.
  • Mix and saute for a few seconds.
  • Add 2 eggs.
  • Let them cook for a few seconds.
  • Scramble and cook the eggs for a minute.
  • Add 1.5 cups of water. Can add more for more thin consistency.
  • Bring it to a boil.
  • Add 2 sachets of maggi masala.
  • Stir everything.
  • Add 2 packets of maggi noodles.
  • Cook for few seconds.
  • Break the noodles or cook as it is.
  • Mix.
  • Cook the maggi until the water gets absorbed at least for 4-5 minutes.
  • Do not overcook and make it soggy.
  • Switch off  the flame.
  • Garnish with chopped coriander leaves.
  • Serve hot.
