Take a pan, add oil and heat it.
Add finely chopped onions, finely chopped carrots, finely chopped green capsicum, finely chopped french beans, deseeded finely chopped tomato.
Saute the veggies for 2-3 minutes.
Add salt to taste, red chili powder, ginger garlic paste.
Add black pepper powder.
Mix and saute for a few seconds.
Add 2 eggs.
Let them cook for a few seconds.
Scramble and cook the eggs for a minute.
Add 1.5 cups of water. Can add more for more thin consistency.
Bring it to a boil.
Add 2 sachets of maggi masala.
Stir everything.
Add 2 packets of maggi noodles.
Cook for few seconds.
Break the noodles or cook as it is.
Mix.
Cook the maggi until the water gets absorbed at least for 4-5 minutes.
Do not overcook and make it soggy.
Switch off the flame.
Garnish with chopped coriander leaves.
Serve hot.
