Ingredients
  

  • 2 ½ cups pancake mix
  • ½ cup sugar
  • 1 large egg
  • 1 cup milk
  • ¼ cup melted butter or vegetable oil
  • 1 teaspoon vanilla extract or almond extract
  • 1 cup fresh blueberries (add your favorites)

Instructions
 

  • Preheat the oven to 400 °F.
  • In a mixing bowl, add the pancake mix, sugar and give a mix.
  • Also, add in egg, milk, melted butter, vanilla and mix well without any lumps.
  • Add fresh blueberries and fold the batter.
  • Take muffin tins and place parchment paper or baking paper in the cups.
  • Pour the batter with the help of a spoon until ¾th of each tin.
  • Bake the muffins for at least 15 to 18 minutes or check with toothpick.
  • If the toothpick inserted comes out clean, muffins are perfect to enjoy.
  • Take the muffin tin out carefully, rest them for a few minutes, take the muffins out and serve.
