Ingredients
  

  • 5 boiled eggs
  • 2 tablespoon edible oil
  • 2 medium sized finely chopped onions
  • 4 tablespoon vertically slit green chillies
  • 5-6 curry leaves
  • salt - as per taste
  • ½ teaspoon red chilli powder
  • ½ teaspoon turmeric powder
  • ½ teaspoon ginger garlic paste
  • ½ teaspoon black pepper corn powder

Instructions
 

  • Boil eggs and peel them.
  • Cut them into two halves.
  • Heat oil in a pan.
  • Add some salt and turmeric powder and stir them well.
  • Add the cut eggs and stir fry each side of the eggs well.
  • Take the fried eggs out and place them aside.
  • Into the same oil, add the sliced onions.
  • Give a mix and saute.
  • Add green chillies and curry leaves into it.
  • Saute them until they turn soft.
  • Add dry spices such as salt, red chilli powder and mix.
  • Add ginger garlic paste and saute few minutes.
  • Add black pepper corn powder and give a mix.
  • Add the fried boiled eggs into the masala.
  • let it cook for a minute on low flame.
  • Flip the eggs carefully and cook the other side too.
  • Make sure the eggs are stir fried and coated well on both sides with the masala for few minutes.
  • Switch off the flame.
  • Serve with rice or roti as a side dish along with dal or curries.

Notes

  • If one would prefer less spicy then add black pepper powder according to the level of spicy taste.
  • Adding roasted black pepper powder would give even better taste to the whole dish...
