Chicken fried rice is an Indo Chinese version of fried rice where boneless chicken strips are added into the fried rice. Rice is fried and sauteed well and this is the perfect chicken fried rice recipe that is served in fast food centres and restaurants.
This fried rice is made in the Indian Chinese version which is quite popular all across fast food joints in India. This recipe is quite easy if instructions are followed properly. Other recipe collections on the blog are chicken fry Andhra, Hyderabadi biryani.

This recipe does not require any special rice like basmati...Making use of plain ordinary rice is more than enough to get the perfect taste.
In fast food centres, this recipe uses parboiled rice where rice is processed in a different way. Since we wish to make it at home we can make use of ordinary rice.
However, if one wishes to use basmati rice, then soak the rice for half an hour and cook it perfectly with grains appearing loose and separated.
The rice here is made with some beaten eggs, veggies, boneless chicken strips, sauces and spices. Using them, frying and sauteing rice gives us delicious Chinese fried rice.
Add any vegetables that are preferred and it tastes much better with a mix of eggs and veggies than just plain chicken. Other rice or fried rice recipes to check out are veg fried rice, egg fried rice, veg biryani in the cooker, hibachi fried rice and can be served with chicken jalfrezi, murgh makhani etc...
This can also be called Chinese fried rice as we cook it in Chinese style by using different sauces like soya sauce, red chilli sauce and vinegar.
The chicken is cooked separately and added to the fried rice. The chicken strips should be marinated in spices and cooked until they turn tender.

Ingredients
For cooking chicken:
- 1 tablespoon oil
- 1 cup boneless chicken strips 2 chicken breasts
- salt - to taste
- ½ teaspoon black pepper powder
- 1 ½ teaspoon corn flour
- 1 teaspoon ginger garlic paste
- 1 egg white
- ½ teaspoon red food color
Other ingredients:
- 2 eggs
- 1 teaspoon ginger garlic paste
- 2 tablespoon very finely chopped carrots
- 2 tablespoon very finely chopped capsicum
- 2 tablespoon very finely chopped spring onion bulbs white
- 2 tablespoon very finely chopped spring onion greens
- 1 ½ cup rice ordinary/basmati
- salt -to taste
- ½ teaspoon red chilli powder
- ¾ teaspoon white pepper powder
- 1 teaspoon soya sauce
- 1 teaspoon red chilli sauce
- 2 teaspoon vinegar
Instructions
- Firstly, cook the rice by adding sufficient water in a cooking vessel and rest it aside.
Making of chicken:
- Add chicken into a bowl, add salt, black pepper powder, corn flour, ginger garlic paste, egg white, red food colour.
- Mix well, marinate the chicken for half an hour.
- In a wok, add a tablespoon of oil, add marinated chicken, mix, saute and cook until chicken tenders.
- Rest it aside.
Making of chicken fried rice:
- In a separate wok, add oil and heat it.
- Take two eggs, break them, add salt and blend well.
- Add the beaten eggs into the wok.
- Cook for few minutes, scramble the eggs and cook well.
- Into it add ginger garlic paste.
- Saute well.
- Add chopped capsicum, chopped carrots, chopped spring onion white, chopped spring onion green.
- Mix and saute well.
- Add cooked chicken strips and saute for a minute.
- Into it add cooked rice and mix well.
- Saute for two to three minutes.
- Add salt, red chilli powder, white pepper powder and mix well.
- Saute for two to three minutes.
- Add soya sauce, red chilli sauce and mix well.
- Saute for a minute.
- Add vinegar, mix well and saute for a minute.
- Chicken fried rice is ready to be served.

2.Chicken used should always be boneless and mainly make use of breast of chicken.
