aloo bhaji or potato bhaji or batata bhaji is a veg curry recipe made using boiled potatoes. The boiled potatoes are sauteed in some spices, herbs and served as a side dish. This actually is a Maharashtrian style of making batata bhaji but this particular recipe method is a common style of making aloo bhaji in south India too...

This bhaji is often eaten and served with in south india, but in maharashtra region it is usually served with chapati or poori.

About potatoes and bhaji
This bhaji recipe is also used in making masala dosa and can be eaten with any roti recipe.
Other recipes to be tried with aloo are aloo paratha, potato curry, aloo jeera, aloo methi, aloo matar, aloo palak, samosa etc...
Potatoes can be used to make several curries, gravy recipes, sabzi recipes and this aloo bhaji is made by boiling potatoes and sauteing them in spices.
This is a very common side dish down south and north. This curry is nothing but a common potato masala for dosa that is usually made and added on masala dosas.
Here, I have made it in such a way that it should be served with rotis too and pooris as well.
Making the recipe
It is made by first boiling the aloo, after boiling the potatoes should be peeled, mashed and cooked in aromatic tempering on spices, curry leaves and onions.
Aloo is one such vegetable which is a favorite amongst the young and kids etc...
Aloo can be made into several interesting recipes which are made into endless recipes and this is one such wonder vegetable which can be combined with several other vegetables that are available in our kitchen and made as mixed veg curries too.
This is the most simplest of all aloo recipes and quick to make as early morning side dish recipes for poori, chapati or dosa, uttapam etc... One can even serve this batata bhaji as a side dish to rice too but along with some other curries like dal etc...
Below I have shared the recipe details on how to make this potato bhaji and make a quick and easy aloo recipe in our day to day life.
Recipe
aloo bhaji recipe, batata bhaji | potato bhaji
Ingredients
For boiling potatoes:
- 500 gms potatoes/ 5-6 potatoes
- salt to taste
- ½ teaspoon turmeric powder
- enough water to boil the potatoes
For cooking the aloo bhaji:
- 2 tablespoon oil
- ½ teaspoon jeera/cumin seeds
- ½ teaspoon mustard seeds
- 3 slit green chillies
- ½ teaspoon urad dal/split black gram
- ½ teaspoon chana dal/bengal gram
- 7-8 curry leaves
- 3 medium size onions thickly sliced length wise
- salt to taste
- ¼ teaspoon turmeric powder/haldi
- boiled potatoes
- 2 tablespoon freshly chopped coriander leaves
Instructions
For boiling potatoes:
- Firstly wash the potatoes, take each potato, cut it into two halves and cut all the potatoes in the similar way.
- Take a pressure cooker, add all the cut potatoes into it.
- Add enough water into the cooker, add salt as per taste, add turmeric powder.
- Cover the pressure cooker lid and pressure cook for 5-6 whistles on medium flame.
- Reduce the steam, remove the lid.
- Take all the potatoes out carefully with a spatula and place them on a plate.
- Cool them down.
- Peel all the potatoes.
- Mash them well and place them aside.
Cooking the aloo bhaji:
- Take a wok, add oil and heat it.
- Add cumin seeds, mustard seeds, slit green chillies, split black gram, bengal gram, saute for few seconds.
- Add curry leaves and allow them to crackle.
- Add the thickly sliced onions, mix well.
- Add salt as per taste, turmeric powder, mix the masala well and cook for few seconds on low flame.
- Add the mashed potatoes, mix everything well and cook for a minute or two on low flame.
- Lastly, garnish with freshly chopped coriander leaves and give a mix.
- Serve hot with dosa, poori or roti or chapati.
